Delicious and so simple to make!! I tweaked the recipe a bit,i added chopped kale and tomato and seasoned with garlic salt,black pepper,nutritional yeast flakes and onion powder. Served with steamed veg and caramelized onion humous. You have to make these,they’re so good!
I followed this recipe. For those not in the USA,half a cup of plant milk is 120ml and half a cup of flour is 50g x
Got a 3 grain pre cooked pouch from the whole foods section in Tesco today and made a filling,yummy salad with it. It’s bulgur wheat,green lentils and barley. I added baby spinach leaves,rocket,tomatoes,cucumber,avocado,spring onion,humous and a sprinkle of Italian garlic seasoning. Tossed together and ate. Yum! X
Dinner tonight,gorgeous cheesy garlic mushrooms. Thought this up at work while thinking what to make for dinner with some mushrooms that needed using up! Ok,cooked rice then melted a big dollop of marg and 4 crushed garlic cloves in a frying pan,then added the mushrooms and some spring onions. Fried for a few mins until done but also made sure there was some buttery liquid left. Dished up and then drizzled the rest of the marg and garlic liquid on top of the mushrooms and rice. Added some Tesco smoked vegan cheese and popped in microwave for 30 secs to melt the cheese. Sprinkled on some chopped fresh parsley,done,lovely! If you don’t want to use a vegan cheese,nutritional yeast flakes would work the same sprinkled on top. I thought the saltiness of the cheese added a nice flavour to the meal x
So simple,so moreish! Put kale in a bowl (remove stalks) and pour on some olive oil. Massage/rub the oil into the leaves.
Add seasoning,I use the classics ; nutritional yeast flakes,salt and black pepper. Massage that into the leaves.
Put onto a baking tray and cook for 5 or so mins on a medium heat in the oven. I also turn pieces every minute or so with a fork for even cooking. Cook until browned and let them cool,they turn really crispy when cooled. Enjoy! X
I followed this recipe for the salt and pepper tofu,and for the peri peri tofu,i used a store bought peri peri rub in seasoning. I was pleasantly surprised at how delicious the salt and pepper tofu was considering the ingredients were just cornflour (cornstarch),salt and pepper! Really,really delicious! Even if you’re not a huge tofu fan,try it this way,it’s beautiful! x
1 block extra-firm tofu
¼ cup vegetable or canola oil
¼ cup corn starch
½ teaspoon kosher salt
¼ teaspoon freshly-ground black pepper (or to taste)
Additional salt and pepper to taste
Press tofu to remove excess moisture. To do so, line a plate with several paper towels. Place tofu on paper towels and top with two or three more paper towels. Place three or four more plates on top of the tofu, making sure they’re well-balanced. Drain for 20 – 30 minutes, checking occasionally to make sure plates are still balanced (toppling plates = bummer!)
Remove tofu from paper towels. Place on cutting board and cut tofu into squares or rectangles, as desired.
Add the vegetable or canola oil to a large skillet over medium-high heat.
Add the corn starch, ½ teaspoon salt and ¼ teaspoon pepper to a large plate or shallow baking dish. Mix.
Working in batches, dredge the tofu in the corn starch mixture, turning to coat evenly.
Carefully add tofu to hot oil in skillet. Cook over medium-high for about 10 minutes, turning occasionally to brown all sides.
Remove tofu from pan and place on several paper towels, blotting to remove excess oil.
Serve as desired.
